Chef Dustin Atoigue has made it a priority to train and oversee experienced cooks to create a consistent dining experience that will make you want to roar, “OOH RAW!” We keep all our ingredients in temperature-controlled, stainless steel stations to ensure the highest standards of food safety, hygiene, and freshness that will make you want to come back for more.
Hafa Adai Inspired
In the Pacific Island of Guam, Hafa Adai is similar to “Aloha” in Hawaii. Since his childhood in Guam, Executive Chef Dustin Atoigue became familiar with traditional Hawaiian recipes under the guidance of chef Sam Choy of Hawaii. As Dustin grew up catching fish on his mainland, he implemented Guam-Hawaiian flavors to create fresh, healthy, and authentic poke that could not be found outside the Pacific Islands. Combining the inventiveness of our owners along with Chef Dustin’s traditional Pacific Island recipes, we took all the components to create a flavorful menu that you won’t find at your average poke joint.
